Trout with spring vegetables for cooking in the oven
Ingredients:
- 4 trout
- 3 beets
- 3 white carrots
- 3 orange carrots
- 3 garlic cloves
- 200 ml vegetable broth
- 80 g butter
- 1 lemon
- 2 tbsp almond
- 1 bunch cilantro
- salt and pepper
Training :
Preheat oven to 200°C. Peel the vegetables, then cut them into thin slices. Lay them on the bottom of a baking dish. Add the garlic cloves and pour over the broth. Season. Wash and dry the trout. Salt and pepper the insides. Then put them on the vegetables and add the butter. Drizzle with lemon juice and bake for 20 minutes. When the fish is ready, melt the remaining butter in a saucepan. Add chopped almonds and coriander. Pour the mixture over the fish just before serving.
Breaded blue whiting with tartar sauce
Here is a quick and easy fish side dish recipe that the whole family will love.
Ingredients:
- 8 blue whiting fillets
- 80 g flour
- 80 g breadcrumbs
- 1 egg
- 2 egg yolks
- 2 tbsp mustard
- 3 cucumbers
- 1 C. capers
- 2 lemons
- 2 sprigs of chervil
- 2 sprigs of parsley
- 2 sprigs of tarragon
- 5 green onion sprigs
- 100 g butter
- 200 ml vegetable oil
- salt and pepper
Wash and chop the indicated herbs. Set aside a tablespoon of the mixture. Cut cucumbers and capers. Whisk egg yolks with mustard and butter until you get mayonnaise. Add some lemon juice, herbs, pickles and capers. Season and leave to cool. Sprinkle flour onto a plate. Place the breadcrumbs in a separate bowl and the beaten egg in a third. Cut the fish fillet in half. Dip them in flour, then egg, and finally breadcrumbs. Heat the butter and vegetable oil in a large skillet, then fry the fish. Lay the fillet on a sheet of paper towel. Serve fish with tartar sauce and lemon.
Easy Fish Recipes: Grilled Salmon with Rhubarb Sauce
Ingredients:
- 5 salmon fillets
- 500 g rhubarb
- 1 bulb
- 80 g raisins
- 1 pod fresh ginger
- 260 g brown sugar
- 4 tbsp buckwheat seeds
- 260 ml white vinegar
- 1 sprig of dill
- olive oil
- salt and pepper
Start by making the rhubarb sauce. To do this, clean it and cut into pieces. Peel and cut the ginger. Dip the berries for 20 minutes in a glass of hot water. Peel the onion and chop it. Warm up the vinegar and sugar. Add rhubarb, onion, ginger and raisins. Cook for half an hour or until the liquid has evaporated. Let cool and refrigerate. Roast the buckwheat seeds for 1 minute in a dry frying pan. Heat a little olive oil in a saucepan and fry the salmon steaks for 3 minutes on each side. Serve salmon with chutney. Add dill sprigs and season.
Cod fillet with cream and lemon
Ingredients for 6 servings:
- 1 kg cod
- 30 g butter
- 300-350 ml liquid fresh cream
- lemon juice
- 1 lemon
- salt and pepper
- Cayenne pepper
- chopped green onion
Training :
Just like in the previous fish recipe, here you also need to start by preheating the oven. Then rinse and dry the cod fillets well with paper towels. Take one of your porcelain plates and oil it well. Season the fillets with salt and pepper and place them inside. In a small bowl, add cream, scallions, lemon juice, and two pinches of cayenne pepper. Mix everything and coat the fillet well with the resulting mixture before placing in the oven. Cook for about 30 minutes or until the fish is quite soft. Serve with a few lemon slices around the fillet.
Codfish Papillotte with Orange and Avocado
Ingredients:
- 4 cod fillets
- 2 ripe avocados
- 2 oranges
- 1 bunch dill
- 1 fresh ginger, peeled and put through a garlic press
- 1 C. paprika
- 4 tbsp olive oil
- 1 lime
- salt and pepper
Preheat oven to 180°. Peel, remove pits and cut the avocado into strips. Pour lemon juice over them to keep them from turning black. Wash the oranges under hot water, then cut into thin slices. Place parchment paper, a few slices of avocado and orange slices in the center of each sheet. Sprinkle them with paprika and dill, then top with fish fillets. Add remaining avocado and orange. Season and tie the papillot with kitchen twine. Bake papillottes for 15 minutes. Meanwhile squeeze the orange and half the lime. Heat the game over low heat and add fresh ginger, peeled and put through a garlic press. Salt, pepper and add olive oil. Whisk to emulsify the sauce. Remove fish from oven, drizzle with orange sauce and enjoy.
Easy Fish Recipes: Almond Halibut
Ingredients for 12 servings:
- 12 halibut fillets
- 2 lemons
- 200 g almonds, ground
- egg yolks
- 80 g butter
- salt and pepper
Training :
Take the zest of two lemons, then grate it and mix it with the almonds. Whisk the egg yolks in a small bowl and heat the oil in a frying pan. Roll the fillet in the yolks, then in the almond preparation. Fry them for 3-4 minutes on each side. Season them with salt and pepper. Finally, serve your meal with mashed carrots, broccoli, or cauliflower, if desired.
