Clafoutis is a cake that has many benefits: it’s refreshing, easy to make and can be kept in the fridge for several days. To enhance the pistachio flavor in this gourmet version, you can replace the almond powder with pistachio powder. Extend the clafoutis season by replacing cherries with apricots and enjoy a long lasting pleasure!

Clafoutis recipe with cherries and pistachios
For 8 people
Preparation time : 10 minutes
Cooking time : 35 minutes
Ingredients:

– 600 g cherries
– 4 eggs
– 110 g brown sugar
– 120 g almond powder
– 30 g wheat or spelled flour
– 20 cl full liquid cream
– 10 ml milk
– 2 CASES of pistachio paste
– 3 SHELLs of shelled pistachios
– 1 CASE of powdered sugar
Training :
1. Beat eggs with sugar until the mass turns white.

2. Add pistachio paste.

3. Add ground almonds, flour and mix well.

4. Pour in the milk and cream, then stir.

5. Preheat oven to 180°C. If desired, pit the cherries and place them in the bottom of a gratin or pie dish.

6. Pour the cherry mixture over.

7. Bake for 35 minutes at 180°C.

8. Let cool, then sprinkle with a little powdered sugar and shelled pistachios before tasting.
