The chef is back with a new program he’s making for amateur pastry chefs looking to change jobs.
According to a study by the Observatory of Society and Consumption, 4.6 million French people plan to change jobs in the next two years. Among the new destinations, confectionery is increasingly being imitated, often through successful shows such as “Le Meilleur Pâtissier” on the M6. It was on the basis of this observation that the producers of “Factory of Kitchens” created a new concept “Academy of Cakes”, launched this week on the channel.

Working with Cyril Lignac
Idea? Offer amateur confectioners who want to become professionals the opportunity to complete a training course with a prize for the best student of 10,000 euros, as well as a big surprise. Cyril Lignac, who runs this academy and produces the show, will indeed offer a professional contract in his company to whoever convinces him the most.
“The members want to change their lives, which means two things: that I don’t lie to them and that I be like in my companies”
Inevitably, a very attentive chef follows the course of the candidates, gives them advice and evaluates them. “The members want to change their lives, which means two things: that I don’t lie to them, and that I be like I am in my companies.he explains. I am demanding of my employees, but customers with me are a hundred times more demanding. What’s interesting is to make them feel what our work really is. This program is the reality of life!”

Three cycles of learning
Twenty-four high-level amateur pastry chefs (lawyer, hairdresser, nurse, etc.) were selected by the industry for this accelerated training course, divided into three cycles (training, improvement and, finally, skills and real-life situations). Divided into four classes of six students throughout the course, participants are taught by two teachers, Ophelie Bars and Desti Brami. First, she cut her teeth in such palaces as the Ritz or Cheval Blanc, then she was awarded the Pastry Chef of the Year award in 2014. Just in case, she won the second season of the show “Who will be the next great pastry chef?” on France 2 in 2016. As for Desti Bramy, trained at the Plaza and Georges V, he is the vice-champion of France in desserts, and is now the pastry chef at the Château de Ferrière school, where he teaches pastry.

21 big names in the candy store
Within a few weeks, the candidates of the “Academy of Cakes” study techniques, are tested in various aspects of the trade, undergo internships in the most prestigious houses and develop along with the best French pastry chefs. 21 people take part in the program, such as Pierre Herme, Philippe Conticini, Sebastien Vauxion and even Frédéric Anton, inviting participants to their large houses to complete their studies. In the end, the two finalists will get the opportunity to try their creations with real buyers during the final duel. In this way, whoever receives the most votes will have the opportunity to change their lives by joining Cyril Lignac’s company.
