Facing shortages and rising prices

Among the consequences of the war in Ukraine is the shortage and rise in the cost of raw materials. For individuals, but also for professionals. The most important of them concern flour, as well as vegetable and butter.

The price of flour is increasing, so the baguette will inevitably rise in price. Stocks are running out and essentials must not be allowed to breed speculation.

Some wonder at this evil, which can also be good. Sunflower fields, like palm fields, are not necessarily good for planetary health. In addition, the boom in rapeseed oil production may allow farmers to diversify their activities.

To illustrate this sequence, Thierry Marx offers a recipe for onion soup.

Eight Ingredients:

600 g of onions, 150 g of bacon, 2 tablespoons of flour, 1 bunch of garni, 200 g of stale bread, 250 g of grated Gruyère, 4 egg yolks, 4 tablespoons of Madeira, 2 liters of beef broth (you can use a cube of water).

Training :

Peel the onion, cut it in half and chop finely; fry them in lard in a saucepan until brown (you can add a pinch of sugar to caramelize). Add flour, stir and cook like a dressing.

Add bouquet garni, deglaze with Madeira, moisten with broth and leave to cook (a little trick: bring to a boil over a fire and cook in the oven).

Meanwhile cut the stale bread into cubes. Place these croutons in an oiled skillet to brown, place them on a wire rack and sprinkle with grated cheese. Serve the soup in bowls sprinkled with cheese toasts.
