- 110 g coconut sugar
- 12 cl of water
- 160 g almond powder
- 160 g gluten-free oatmeal
- 1 tablespoon baking powder
- 1 tablespoon cinnamon powder
- 100 g crushed walnuts
- 260 g grated carrots
For the frosting (preparation in 8 hours):
- 150 g vegetable yogurt
- 3 tablespoons coconut oil
- 3 tablespoons powdered sugar
- 3 tablespoons chopped walnuts
Training :
1. For glaze: place a thin cloth in a colander and place the latter over a container in which the flowing liquid will be collected. Pour yogurt into this cloth. and let it drain for at least 12 hours.
2. In a salad bowl, mix sugar and water, add ground almonds, oatmeal, yeast, cinnamon and mix well. Then add chopped walnuts and grated carrots. Pour the batter into a baking dish and bake for 45 minutes at 180°C. Let cool.
3. Prepare frosting by mixing drained yogurt, cold melted coconut oil and coconut sugar. Decorate the cake with carefully prepared icing. Leave to harden in the refrigerator for 1 hour.
Oatmeal flourless cookies
For 14 cookies

- 150 g oatmeal
- 60 g coconut sugar
- 50 g coconut oil (or vegetable oil)
- 1 pinch baking powder
- 1 egg
- 1 teaspoon natural vanilla extract
- 1 pinch of salt
- 60 g chocolate chips
Training :
1. Melt coconut oil and let cool. Mix the oats very finely to get a fine powder.
2. In a bowl, mix the egg, coconut sugar, coconut oil, vanilla, salt, baking powder. Add oatmeal and chocolate chips. Place in refrigerator for 1 hour.
3. Preheat the oven to 180°. On a baking sheet lined with parchment paper, place dough balls the size of a small walnut. Add chocolate chips on top. Let it cook for 8 to 10 minutes.
Chocolate zucchini cake
For 6 people

Ingredients:
- 250 g dark chocolate chip cookies
- 200 g grated zucchini
- 4 eggs
- 40 g fructose
- 5 drops natural vanilla extract
- 20 g bitter cocoa without sugar
- 30 g whole grain flour
Training :
1. Break the chocolate into pieces and melt in a water bath.
2. Peel and grate the zucchini.
3. Separate the proteins from the yolks and mix the yolks with fructose and vanilla. While stirring, add cocoa powder, add zucchini in small portions and mix. At the end, add flour and melted chocolate. Mix well.
4. Whisk the egg whites, then gently fold them into the mixture with a wooden spoon so as not to break the egg whites.
5. Pour into a mold and bake for 25-30 minutes at 180°C.
