- 6 potatoes
- 2 onions
- 100 grams of butter

First of all, you will need to wash the leeks well. Then remove the first leaves and cut them into thick slices. Then you will need to peel, wash and cut the potatoes into 8 pieces. After that, peel and chop the onion. At this stage of cooking, add water, leeks, potatoes and onions to a saucepan. Then salt and pepper. Place over low heat and simmer, half covered, for 30 minutes. Finally, mix everything together. All you have to do is add a dollop of butter to each bowl before serving.

January pumpkin, carrot and potato soup
Ingredients :
- 1.5 kg pumpkin
- 2 carrots
- 2 potatoes
- Onion
- garlic clove

This recipe will take you 20 minutes to prepare. First of all, peel the onion and garlic and chop them. Next, take care of the pumpkin, cutting the pulp into cubes. Peel carrots and potatoes. Don’t forget to wash them. Cut them into slices.
After that, add three tablespoons of sour cream to the tender pieces of pumpkin. Then mix everything and heat over low heat. Cover the pan and let cook. Then put the oil in a saucepan on the fire and fry the pieces of pumpkin, onion and garlic. When they are well browned, fill them with about half a liter of water.
Onion soup
“Poor Man’s Soup” is a win-win choice for winter soups, very popular with families who sometimes even eat it outside of meals. Here are the ingredients you will need to make your recipe a success:
- Four large onions, minced
- 3 lightly beaten egg yolks
- 2 garlic cloves peeled and crushed
- 30 grams of flour
- 50 grams of butter
- 5 centiliters of oil
- Salt
- Pepper
- Bouquet garni
- 10 ml white wine
- 10 ml madeira
- 100 grams of grated cheese
- 1/2 baguette, chopped
Fry the onion in butter and vegetable oil over medium heat to give it color. Cook for a few seconds, adding a little flour. Then moisten with white wine and let boil. After that, add three quarters of a liter of water, salt and pepper. Discard the bouquet of garni and garlic. Then you will need to bring everything to a boil and simmer for an hour. This will give you time to cut the bread into small slices and make croutons out of them by placing them in the oven.
Also mix egg yolks and Madeira. Don’t forget to take out the bouquet garni as soon as the soup is ready. Finally, add the egg yolks and mix well. You just have to decorate the part by spreading out a few croutons and adding Gruyère cheese to the bowls of soup.
