Orange Pie Recipe by Cyril Lignac
150 g sugar
80 g butter
Zest of 2 oranges
140 g orange juice
120 g flour
10 g yeast
1 pinch of salt
Preheat the oven to 180°C (thermostat 6).
Whisk the egg yolks and sugar until the mixture turns white.
Add melted butter, orange zest and 120 g orange juice. Continue whisking vigorously.
Then add flour, baking powder, salt. Stir gently.
In a second bowl, beat egg whites with a mixer. Gently fold the egg whites into the previous mixture with a spatula.
Pour the dough into a greased form and bake for 30 minutes.
When you take it out of the oven, let the cake cool and moisten it with 20 g of warm orange juice.
